Hi friends! It’s my officially my birthday week! I get to do whatever I want for a whole week! Who am I kidding? I have kids and they won’t let that happen. Plus I already celebrated this weekend with friends and family AND got my birthday gift early. I got new boots! Woohoo! I’ve been wearing them around the house to do random things in order to break them in. Silly, I know, but it’ll make a big difference when I have wear them out for real.
Enough about my new (super cute!!) boots. Here are some yummy menu ideas to get you through the week.
Monday – Southwest quinoa casserole // If you have never tried quinoa – this is the time to go for it! This recipe is perfect for meatless Monday and kid approved! (Aka there is lots of cheese!)
Tuesday – Easy chicken and dumpling soup // Like my favorite comfort food in soup form? Yes, I need this in my life! (You do too!)
Wednesday – One pot BBQ bacon and chicken pasta // I’m pretty sure that’s all of my favorite things combined into one delicious dinner!
Thursday – Baked orzo and chicken // I love orzo! It’s a great alternative to potatoes and makes for a delicious comforting meal.
Friday – Mississippi roast // I will be buying a roast this week to try this one soon!
Breakfast idea – New York style coffee cake // This is so good with a hot cup of coffee or a big ole glass of milk!
Dessert – Double chocolate peanut butter cookie dough cake // No description needed for this delicious cake!
