Im a huge fan of crock pot meals because you do half the work to get dinner made. I normally cook breakfast then prep everything to put in the crock pot right after. And then it never fails, half way through the day I start to worry about what Im going to cook for dinner. Then the smell from the crock pot waifs in and everything is right in the world again.
One of my all time favorite easy homemade recipes is the slow cooker whole chicken. Its easy to prep, comes out so moist and we end up with leftovers for the rest of the week. And probably the best part – its a one pot meal! The less dishes you have to do after dinner, the better the meal tastes. [Am I right?]
To make your own slow cooker whole chicken meal you will need:
- A whole chicken – 4 to 6 pounds work best – frozen
- 2 Cups Water
- Spices of your choice
Chop the onion, potatoes and carrots and set them aside. Place the whole chicken (frozen) in the crock pot and add your spices. Place the vegetables around and on top of the chicken. Add the water and cover. Set the crock pot for high for 6 hours or low for 8-9 hours.
We use water so when the chicken is done cooking we can use the juice to make chicken broth. I can’t take credit for that idea, my husband thought of it. He comes in handy sometimes. You know what else comes in handy? Crock pot liner bags! [Mind blown, right?!] One of my friends told me about them and my life has not been the same since. [That’s slightly dramatic but also slightly true.] You can find them next to the saran wrap. It makes cleaner your one pot meal SO much easier!
The only downfall of this recipe is that the chicken is so moist that is literally falls off the bone. If you want to call moist, delicious, fall off the bone chicken a downfall.
- 4-6 pound frozen chicken

- It literally falls off the bone so it may be difficult to pull out in one piece.
