Today was one of those mornings. I was up early (not a problem), I started the coffee (great) and looked in the fridge for breakfast (problem!). Little to no milk, no eggs and no bread! I sort of went into panic mode. I have three mouths to feeds and all the essentials are missing! Thank God for Bisquick, vanilla extract and chocolate chips. I was able to whip up an easy homemade recipe in now time that made everyone happy.
Easy Chocolate Chip Scones
1 cup milk
3 cups Bisquick
1/2 cup chocolate chips
2 tbsp vanilla extract
Preheat oven to 450
Mix all ingredients together
Spoon onto a greased baking sheet
Bake for 15 minutes
Slather in butter (optional but its my favorite part)
Divine! You can sprinkle with sugar if you have an extra strong sweet tooth. I may or may not have eaten one right out of the oven covered in butter. These are similar to drop biscuits but are perfect for breakfast. It will be fun to experiment with other ingredients. I feel a pumpkin scone in our future! [I may or may not be a pumpkin addict.]
In a non food related update.. I had to make an “All about me” poster for Ryley’s daycare. The scrapbooker in me came out as I whipped up this cute board last night. Since Im completely unbiased, hers is the best. HA!
