Hey yall! I hope everyone had a nice relaxing weekend. Ryon and I went to a hockey game with our friends and then to a Saint Patrick’s day block party downtown. Nothing reminds me I am not in college anymore faster then going downtown. There were tons of people and we had to navigate through them to do anything. I spotted a funnel cake booth and decided I needed one RIGHT NOW. Of course they didn’t take money, only tickets. I look over and the line for tickets was longer then all get out. I shrugged and we kept on navigating through the crowd. It was fun but not something I can do often. Especially when we ended up losing an hour of sleep due to day light savings. I’m one tired momma bear.
Anyhoo, here are some amazing dinner, dessert and snack ideas for this week.
Monday – Pineapple and habanero slow cooker pulled pork // Start the week off with an easy crock pot (and oh my gosh delicious looking) dinner. I bet you won’t be disappointed.
Tuesday – Brown butter lemon pasta (with whipped ricotta) // I can eat ricotta with a spoon straight from the tub so I am ALL OVER this lemon pasta!
Wednesday – Spicy orange shrimp // This easy dinner is ready in under 15 minutes. Who doesn’t love that??
Thursday – Creamy shrimp and corn soup // I love a good corn soup and this one is ready to eat in no time. I may extra love this soup!
Friday – Shrimp teriyaki bowls // This a no leftovers kind of dinner. Trust me.. no one will complain about clearing their plate on this one.
Dessert – Homemade shamrock shake // Tis the time of year to enjoy all things minty and green!
Snack – Arroz con leche // Or rice with sweet milk. It’s a snack you won’t be able to put down!
Breakfast – Blueberry dutch baby // One of my favorite ways to eat eggs – fluffy and covered in blueberries!
