Need a cool way to enjoy breakfast? Try these strawberry banana popsicles!

It’s official, yall. It is knock down, drag out hot. Our air condition runs allllll day long and I have to sleep with two fans at night. Our ceiling fan and small fan on my night stand. We went to the beach last weekend and I even hot sitting in the water. And I KNOW I complain every year during the summer of the heat, but this year is EXTRA hot.
And not just because I am 954 months pregnant either. (I’ll be 9 months next week!) It seems to be an extra hot summer down here in Texas this year.
Every day I wonder “How am I going to cook without heating up the house?” There is a lot of cereal going on at the Grant house for breakfast. Sandwiches or salads for lunch. And I try to make one big dinner that will last us a few days. I have to be very strategical in my cooking these days.
Most nights end with ice cream too. Just because.
Ice cream. I can do ice cream. But is it acceptable for breakfast? I may have stood with the freezer open wondering that question to myself. My pregnant brain said eat all the ice cream you want. My mom brain said it needs to be healthy if you are going to serve it for breakfast.
Enter healthy breakfast popsicles.
They are like eating a bowl of oatmeal, fresh fruit and milk in one cool breakfast treat. And to make life easier I used Gerber oatmeal and banana cereal in the pops. (Mom win!) Now if I can only figure out how to make lunch and dinner in popsicle form I will be all set. Hmmmm…
- 1 cup of milk
- 2 (3.5 oz) strawberry yogurts
- 1 frozen banana
- ¼ cup of Gerber oatmeal and banana cereal
- ½ cup of fresh sliced strawberries
- In a blender, mix together the milk, yogurts, frozen banana and cereal until smooth.
- Place the sliced strawberries in a popsicle mold.
- Pour the popsicle mixture over the strawberries. Freeze overnight.
- To remove, turn your popsicle mold upside down and run under hot water for a few seconds. Remove and enjoy!
