I’m really excited for Easter this year.  I’m really excited about Eater every year, but this year I think I’m double-ly excited.  We got the kids new baseball gloves for their Easter baskets!  [Yes, I’m really that excited about gloves.]  We went to Target this past weekend and I had the kids try them on.  Ryley liked a brown leather one with pink trim and stitching.  She made me through the ball to her to make sure she could catch it.  Avery tried an orange and white one and almost exploded with happiness because is his absolute favorite color.

I then had to hide both of the gloves from the kids while we continued to shop.  I could have just come back for them since I love me some Target, but I decided to just buy them then.  Thankful my mom was with me so I could kind of hide them in her cart under some other things.  We also found some Transformers party supplies 70 percent off.  Oh my gah, I wanted to jump up and dance and tell strangers about my good deal. 

But I kept it cool and did an internal happy dance.

The weekend after Easter we are having Avery’s birthday party so finding the decorations for like a buck a piece was just awesome.  Ryon’s brother and family are driving down from Michigan after Easter to spend almost two weeks with us so we are having Avery’s party early so they can be there.  I love my husbands family and wish we all lived closer so it’s exciting that we get to see each other around birthday time.

So we are having Avery’s birthday party two weeks early.  Which is fine because he’s still little and doesn’t know when his exact birthday is yet.  He knows its sometime shortly after sissy’s.  Its exactly two months after Ryley’s birthday.  My babies are 14 months apart.  Well, they aren’t babies anymore.  My preschoolers?  I should say my mini teenagers because holy attitude batman.  But I digress. 

Easter!  I’m excited.  Strawberry shortcake parfaits!  I’m excited!  I mean homemade pound cake covered in homemade strawberry sauce topped with homemade whipped cream?!  It does NOT get any better then that!

Ingredients
  • You can either use homemade pound cake, strawberry sauce and whipped cream, or buy them pre-made. Use the recipes above for homemade recipes of each. Then just layer!
  • 2 sliced of pound cake
  • ½ cup of strawberry sauce
  • ½ cup of cut strawberries
  • whipped cream for topping
  • (Makes one parfait)
Instructions
  1. Put some strawberry sauce on the bottom of your jar.
  2. Add some chunks of pound cake. A little more sauce and some fresh strawberries.
  3. Top with whipped cream
  4. Repeat and enjoy!

Vanilla Iced Chai Latte

How to make your own iced vanilla chai latte!  It's easier then you think and will save you some serious $$$

Ryley has been asking us for awhile to take her training wheels off her bike.  We have been putting it off for a bit because, well, I’m not sure why.  She is the only one on our street that has training wheels.  All the other kids (all 10 of them) have big kid bikes and whiz up and down the street.  The boys even have credit cards in their back wheels so it makes noise when they go by. 

She just learned how to use her brakes on her bike so I was like “Whoa girlfriend, slow down.”

All the bikes were out riding their bikes this weekend and of course the kids wanted to join in.  Ryon was outside with them, so I went inside to do something for a bit.  I came back out and he was taking off her training wheels in the garage.  I just stopped and said “Are you ready for this?” talking to Ryon but Ryley answered “Yup!” 

After he got the training wheels off Ryley thought she could just get up and go.  Except she couldn’t figure out how to get the bike steady to get on the seat.  She was getting frustrated before she was even on her bike.

I ran beside her and held her handlebars and tried to explain that she needed to balance herself while peddling.  And then I had to tell her to peddle faster because she was too busy trying to balance that she forgot to peddle.  Then she wanted me to just let her go after she started moving, but I knew she would just tip over. 

She fell quite a few times.  Well, almost fell.  She would feel herself going down and jump off her bike before it hit the ground.

Her little friend from two doors over was there and would try and help too.  It was sweet to watch her tell Ryley “Now lean this way, now balance.”  She was very patient with her and even said “Let me show her how I do it” and demonstrated on her bike what Ryley should do.  Although she was nice and helpful, I think her being there frustrated Ryley even more.  She just wanted to jump on her bike and go and she wasn’t able to do it like her friend.

After about 15 of me trying to help and then 10 minutes of dad trying to help, she was hot, red faced and done.

So we got a drink of water and played with our Shopkins outside.  I told Ryon that I think this is the first time that something hasn’t come nature to her.  She wasn’t able to just pick up riding her bike as quick as she has done other things and that upset her.  I know she’ll figure it out but it’s tough to watch her want to do something so badly and not be able to yet. 

Ryon asked if she wanted her training wheels back on and she just took a drink of water and said “No daddy, not yet.”  So we will try some more this week and see how it goes.  

Anyone have like some magic bike riding wand I can wave over her?  Or some words of advice on how you taught your kiddo?  This is all new to me – help is appreciated!   

Vanilla Iced Chai Latte

Ingredients
  • 1 chai tea bag
  • 1 cup of water
  • 2 tablespoons vanilla syrup
  • 1 cup of milk
  • handful of ice
  • whipped cream and caramel for topping
Instructions
  1. Brew the tea bag and let seep for 5 minutes.
  2. Allow the chai tea to cool to room temperature.
  3. Place the ice in your glass, followed by the vanilla syrup, chai tea and milk.
  4. Stir together, top with whipped cream and enjoy!

In May I will have been blogging for 4 years.  That makes me both happy and sad at the same time.  Happy because I absolutely love blogging.  I love creating recipes and talking about our lives.  I have learned so much about social media and web design through blogging.  I have met some amazing people that I call friends.  I have unbelievably opportunities all the time because I decided to start a blog.  When I get frustrated with how things are going I stop and think – I get paid to do this.  

It doesn’t get much better then that.

On the other hand, it makes me slightly sad because – how the heck has four years past so fast?  I started this blog right after Avery was born.  He was a teeny tiny baby when I wrote my first post.  Now?  He’s an almost 4 year old BOY that plays with cars and Rescue bots and runs around the house and torments his sister because he can.  He’s not a baby anymore.  I miss the kids being little, but I am so very thankful that I have (somewhat) chronicled their lives through my blog.

My mom has been my most loyal reader from the beginning.  She comments all the time, she shares my posts, she’s my little blogging cheerleader.  She told me the other night that she wished my blog was more about my kids, the way it use to be.  (Mind you, she sees them almost daily.)  We talked about how my site has morphed from a family site, to a catch all site and now to a food blog.  I have a food blog. 

And it will still morph and grow and hopefully become something huge.  I’m not saying I’m the next Pioneer Woman, but I could find my own niche one day.

And honestly, I’m not that interesting.  That’s one of the main reasons I switched to food I think.  Our family life?  Pretty dang boring.  (Except the our sometimes ER visits.)  I don’t think I could have a blog that focused on parenting – because what the heck do I know about that?  My kids stay up way to late, throw too many fits and eat the wrong things.  I could never tell another parent the “right way” to do things. 

So after 4 years I have landed on food.  And honestly, I don’t know why I didn’t see that from the beginning.  It’s what I love to do, share and it’s what people know me for. 

Oh and I might only be blogging about breakfast food and desserts now.  Well, breads, breakfast and dessert.  That’s what I want to focus on creating and sharing.  I’m even thinking of changing my blog name from the Grant life.  Which is crazy.  But I have been tossing names around and trying to figure out if that’s what I want to do.  I might just like naming things. 

Thanks for following along and hanging out with me while I figure out life friends.  Here’s to 4 more years!  (Maybe?!  We will see!)

Strawberry Sauce

Ingredients
  • 1 cup of sugar
  • ½ cup of water
  • 2 cups of strawberries, washed, dried and cut
Instructions
  1. Put the sugar and the water in a small saucepan on the stove top.
  2. Bring to a boil and add the strawberries.
  3. Allow to boil for about 5 minutes then start to mash the strawberries into the sugar water mixture.
  4. Continue to mash until you have reached your desired consistency.
  5. Remove from heat and allow to cool.
  6. Enjoy!
  7. You can store in an airtight container for up to 2 weeks in the fridge.

Yesterday marked day 2 of Spring break for the kiddos.  It also marked the second pajama and movie day at the Grant house as well.  For some reason I thought I would be all kinds of productive while the kids were out of school this week.  I even planned a few crafts and some recipes for us to do.  I’m here to tell you that pretty much none of that has happened. 

I did however binge watch the full first season of the Unbreakable Kimmy Schmidt with Avery.  So I’ll count that as a win.

Ryley asked me “Are we going to school today?”  I said no, not today.  You would have thought I told her all her Shopkins disappeared.  She was super bummed that she had to spend another day away from school.  She doesn’t understand yet that Spring break is a whole week.  I don’t have the heart to tell her that part yet. 

She just keeps naming all her friends in class between watching cartoons and torturing her brother.

I know it’s silly but I didn’t realize how much we all got used to our little routine.  And by routine I mean wake up late, brush the kids teeth/hair, and toss them breakfast as we are walking out the door sometimes without shoes.  (cough Avery cough).  I’m not a morning person so we tend to toe the line on being on time and late in to school most days.  I just assumed that I would still be as productive during the week minus the rush of getting everyone out the door. 

That’s totally not the case at all.

Not having to wake up at a certain time has just made us all lazier and groggier.  If that is even possible.  I’m actually looking forward to getting back into our crazy morning routines next week.  I mean, I’ll have to wear real pants again, but at least I might have some hope of being productive. 

Blueberry Banana Bread

Ingredients
  • 1 cup mashed bananas
  • ½ cup vegetable oil
  • ½ cup plain yogurt
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cup flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup blueberries
  • For the crumb topping:
  • ½ cup powdered sugar
  • ½ cup flour
  • 4 tablespoons butter, melted
  • ½ teaspoon cinnamon
Instructions
  1. Preheat the oven to 350 and prepare a loaf pan with cooking spray.
  2. Mix together the mash bananas, vegetable oil, yogurt, eggs and vanilla until smooth-ish.
  3. In another bowl whisk together the flour, sugar, baking powder, baking soda and the salt.
  4. Fold the wet ingredients into the dry ingredients and pour into the prepared loaf pan.
  5. Mix together the powdered sugar, flour, melted butter and cinnamon for the crumb topping using a fork or your fingers.
  6. Sprinkle the topping over the batter.
  7. Bake for 1 hour, or until a toothpick comes out clean.
  8. Let cool for 1 hour before removing from the pan.
  9. Enjoy!

We went to a high school softball game this past weekend with the kiddos.  My friend’s sister is the head coach for a local team and her games are always fun to watch.  I was excited to go because I love love love me some softball.  I played all throughout middle school, high school and even a little bitty bit in college.  (A junior college for a few games.. but I count it.) 

So anytime we are able to get out to a game I’m a happy camper.

I wasn’t sure how well the kids would behave during the game but we got lucky.  The kids did pretty well up until the 5th inning.  (I say pretty well but I mean they didn’t cause a big distraction as they were climbing up and down the bleachers during the game.)  Then they started getting antsy and Ryley would very loudly ask “Is it done yet?”  It’s hard to explain that we aren’t sure how long the game will go, but there are a few more innings. 

I was sort of sad that my little lady wasn’t more interested in softball.  I tried to explain it to her as the game went on, but she just didn’t seem to care.  (Insert crushed momma heart here.)

Yesterday was a really nice day out so I sent the kids outside to play.  I went to the garage to grab something and saw our gloves out of the corner of my eye.  I grabbed them (we happen to have 4 between Ryon and I) and some softballs and headed back outside with the kids.  Ryon gave Ryley a glove and I got to play catch with Avery. 

Ryley absolutely loved playing catch.  We would give her tips on how to cradle the ball once it got to her glove and step and throw to get better distance.  You could see her trying to process everything each time she threw it back.  She ate it up.  (Insert giant puffy momma heart here.)

Then we did a little hitting practice after.  We just tossed the ball gently towards her and she whacked it over and over again.  Each time she was more excited then the last.  We told her “You are really good Ryley!”  And she said “Yea, I just need a team now” and went back to perfecting her swing. 

Cream Cheese Pound Cake

Ingredients
  • 3 cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • one 8 oz package of cream cheese, softened
  • 3 cups of sugar
  • 6 eggs
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 325. Grease and flour a loaf pan and set aside.
  2. Combine the flour, baking powder and salt in a medium bowl.
  3. Beat the softened butter and cream cheese until its light and fluffy.
  4. Add in the sugar and continue beating for about 2 more minutes. Scrape the sides as needed.
  5. Add the eggs one by one, beating in between each addition. Next, add the vanilla.
  6. Slowly add the flour mixture to the wet ingredients and mix only until the flour disappears.
  7. Scrape the batter into the prepared loaf pan and bake for 1 hour 15-30 minutes. Or until the cake is pulling away from the sides and the top is golden brown.
  8. Allow the cake to cool in the pan, then use a knife to loosen the sides and slide out of the pan.

This weekend I held my first open house!  I actually real estate’d (not a word, but go with it) all weekend.  Saturday I woke up extra early (see 7:30ish) and got ready for the day.  I cleaned out my car, printed off house info sheets and did my hair and makeup.  Before my open house I had an appointment to show a client houses and I showed up early.  EARLY.  I am never ever early. 

I felt all adult-y.  (Go with it.)

I showed a couple of houses to my buyer (who is really a friend, but still looking to buy) in the morning.  I dropped her back at her house, grabbed my info sheets, my ipad and my diffuser and headed to my open house to set up.  On the way to the house I put out some “Open house” signs and debated taking a selfie with one of them.  That’s how excited I was yall. 

I fanned out my business cards and my house sheets and had a little sign in sheet for anyone interested on the bar.  And then I waited.  And waited.

The open house started at 1 and I didn’t see anyone until close to 2.  I wasn’t sure what to do while I waited.  I was in someone elses house that was perfectly cleaned for the showing.  I didn’t even want to sit on the couches for fear I would mess up the pillows or throws.  So I leaned against the kitchen counters and read a book on my ipad.  Then I’d play a round of puzzle pets on my phone, then I’d go back to my ipad. 

Needless to say, I was beyond excited when the first people walked through the door.

I chatted with them for a little bit and told them the specs of the house.  I didn’t want to be a creeper and follow them around the house so I went back to the bar and pretended to be busy while they looked.  After they left, I had 7 other people come through the house between 2 and 4.  Around 3 though I realized I had not eaten at all that day.  I was too busy real estate-ing.  Naturally, I called my momma and asked her to bring me a sandwich. 

She stopped by a few minutes later with a sandwich, fruit snacks, string cheese and a bottle of water.  Because isn’t that what all professional real estate agents eat?

Oh and here is one of the signs that I wanted to take a selfie with but decided against it.  And when I say I “decided against it” I really mean that it was on a busy street and people would have seen me being a goon.

Homemade Naan

Ingredients
  • 1 teaspoon active yeast
  • 1 tablespoon sugar
  • ¼ cup hot water
  • 4 cups of flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 1½ teaspoon baking powder
  • ¾ cup warm milk
  • 1 cup Greek yogurt
  • soft or melted butter for brushing
  • herbs or spices for topping
Instructions
  1. To start - add the sugar and yeast to a small bowl. Pour the hot water over and allow it to dissolve the sugar.
  2. Let sit for about 10 minutes or until its foamy and smells fragrant.
  3. While it is sitting, mix together all the dry ingredient in a separate bowl.
  4. Pour the warm milk and Greek yogurt in the yeast mixture and combine.
  5. Take the wet ingredients and pour them into the bowl dry ones. Use a wooden spoon to mix together. Once it starts to come together, use your hands to form a ball.
  6. Cover with a towel and let sit for 1 hour.
  7. After dough has risen, remove it onto a floured surface and punch down.
  8. Preheat a cast iron skillet over medium high heat
  9. Separate the dough into 8 small balls.
  10. Roll each ball of dough fairly thin (they cook up fluffy).
  11. Brush with your melted or soft butter and sprinkle your spices of choice on top.
  12. Place in the hot skillet and allow to cook for about 30 second son each side. You will know its done when bubbles form on the uncooked side and when golden brown spots form.
  13. Repeat the rolling, brushing and cooking for all 8 balls.
  14. Remove from skillet, let cool and enjoy!

Blueberry Cake Donuts with Lemon Frosting

I love going to the grocery store.  I do.  I think I like shopping in general, but I love grocery shopping.  Especially since I’m all about the food.  I normally take the kids grocery shopping with me too.  It’s very rare that I get to go by myself and when I do, I sort of feel lost.  I tend to just wander and go all slow.  I don’t savor it, I just miss my shopping buddies.  Which is totally and completely weird since they absolute monsters any time we go to the grocery store.

I look around at all the parents with the kids that sit in the cart quietly or walk by their side and I wonder “How the heck do they do that?”  I glance over and Avery is standing up in the cart attempting to get out and Ryley is running around in circles tossing things in the cart.  We have chats before and after we go to the store about how we are suppose to act when we are out. 

That does not include telling everyone around you “I POOTED” Avery.  And it certainly does not include playing hide and seek two aisles over Ryley Ellen.

For some crazy reason I still take them with me to store.  I guess in my mind I think the more I take them, the more likely they are to get use to the situation.  Which 5 years into this parenting thing, has not been the case. 

And I only recently let Ryley walk outside of the cart.  I would have preferred to keep her in there until she was at least 12 but she is so tall that her legs dangle half way to the ground in the front seat or she takes up the whole back part of the cart.  So she has become a free range chicken at the store.

Now if anyone has any tips on shopping etiquette for little kids – send it my way!  I feel like I have tried almost everything to get them to behave when we are shopping.  Most of the time now they watch cartoons on my phone.  I know.. I KNOW.  It really begs the question of why I enjoy taking them out with me in the first place. 

I JUST DO.  I think I secretly love the chaos or something.

I know I will look back and this phase will have pasted all too quickly.  They will want nothing to do with grocery shopping with mom.  I think that’s why I savor the time we get together.  Even if they are tossing 8 packages of applesauce in the cart while running around like a tiny Tasmania devil. 

This parenting thing is all sorts of crazy.

Blueberry Cake Donuts with Lemon Frosting

Ingredients
  • 1 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup sugar
  • ½ cup milk
  • ¼ cup of banana, mashed
  • 4 tablespoons coconut oil, melted
  • 1 teaspoon vanilla
  • ½ cup of blueberries
  • Frosting:
  • ½ cup of heavy cream
  • ½ cup of white chocolate chips
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
Instructions
  1. Preheat the oven to 350 and spray a donut pan with cooking spray.
  2. Mix together the dry ingredients and then fold in the wet.
  3. Place the donut mixture in a plastic baggie and cut off the tip.
  4. Pipe the donut dough into the donut pan and bake for 10-12 minutes, or until they spring back when touched.
  5. Allow to cool on a wire rack.
  6. While they are cooling, heat the heavy cream in the microwave for 2 30 second intervals.
  7. Add in the white chocolate chips and whisk until smooth.
  8. Mix in the lemon juice and zest.
  9. Drizzle over cooled donuts and enjoy!

We had Ryley’s birthday party this weekend.  I’m going to give you one guess what the birthday party theme was.  Did you guess Shopkins?  Because that would be correct.  My Shopkins obsessed little lady had a Shopkins themed birthday party.  And when I say that was the theme, I mean we decorated with a pre-made banner from the website, a Cheeky chocolate cake and a purple unicorn pinata.  Nothing fancy.  At all.

Ryley walked in and saw the Shopkins banner and was SO excited.  She started naming all of the little figures on the banner before she even said hi to anyone.  She sat down and declared that she “love it all.  Everything was perfect”.  All because of one banner and one cake.  (She didn’t even know about the pinata at this point.) 

We had ordered a bounce house for the party hoping to toss all the kids outside to jump jump.  But it was rainy and cold on Saturday so we had to cancel.  I’m not sure who was more disappointed – the kids or me.

I made a quick change of plan and decided the kids would color or paint and play with play doh instead.  Something easy and with things we already had on hand.  When the Ryley’s friends showed up, they all bee-lined to the play room.  No one wanted to color, they were all too busy playing with toys.  One little boy even said “Just call me when there is cake.”  Well, ok buddy.  We can do that.

After hotdogs, hamburgers, mac and cheese, potato salad, chips, fruit and one Cheeky chocolate cake later, it was time to hit the pinata.  We had bought it earlier that day and filled it to the brim with candy and little toys.  It said it would hold 5 pounds of stuff, but I think my mom put closer to 8.  It was one full unicorn.  We let the birthday girl start the pinata party and worked our way up to the bigger kids. 

It was so fun to watch them all whack at the pinata.  Even the little ones got into it.  After a few rounds, we let the biggest kid bust him open and set the kid free to collect all the candy.  I should have apologized to the parents for the amount of candy and toys they went home with. 

After everyone left, Ryley said that it was the “best party ever and ever”.  It must be good to be five.

Ingredients
  • 5 eggs
  • 1-2 links of chorizo sausage
  • 1 jalapeno, deseeded and diced
  • 2 corn tortillas, cut into small pieces
  • 1 medium onion, diced
  • sour cream
  • cilantro
Instructions
  1. Saute the onion and jalapeno until soft and fragrant.
  2. Add the chorizo sausage and cook thoroughly, about 3 minutes.
  3. Crack the eggs onto the sausage, onion mix scramble in pan. Continue to cook until the eggs are fluffy.
  4. Top with sour cream and cilantro.
  5. Enjoy!

Yesterday Ryley turned 5.  I thought I would be sad and pouty the whole day, but I didn’t have time for any of that.  I had to cater her lunch party at school (see – I had to pick up Papa John’s pizza) and then I spent a few hours working on her birthday cake.  She requested  Shopkins party with a Cheeky chocolate cake (one of the characters) so I made a practice cake yesterday for her before the party. 

I’m not saying I’m a cake decorator (see – I’m not at all.  ever.) but it turned out pretty good.

Also, Ryley thought that turning 5 meant that none of the rules applied to her anymore.  She was free of the rules and could do anything she wanted.  Example.  We went to Target and she told me “I’m 5, I don’t have to get in the cart.  I don’t have to get in the cart ever again.”  Whoa girlfriend.  Whoa. 

I’m not sure that’s the case, but since it’s your birthday you can walk with me through the store.

She proceeded to throw every toy in arms reach into the cart.  She declared all the toys were hers because it was her birthday.  She wanted everything.  Play doh, Littlest pet shop, My little pony, Shopkins.  Whatever she could toss in the cart before I could stop her, she wanted.  She also thought that it was like Christmas and every house we went to (even if we left and came back) had more presents for her.  She thought turning five was present-palooza.

She had dance and then we were going to go out to dinner to celebrate.  We asked her where she wanted to go for dinner and she said “I want a grilled cheese from Whataburger.”  Well, ok then.  Are you sure that’s what you want?  Fast food?  Yup.  She wanted a grilled cheese and chocolate milk for her birthday.  Because she’s five.  And apparently that’s what 5 year olds eat for celebration dinners.

Who knew.

Cinnamon Crumb Zucchini Bread

Ingredients
  • Bread:
  • 1½ cups all-purpose flour
  • ¾ cup sugar
  • 2¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1½ cups shredded zucchini
  • Crumb Topping:
  • ½ cup powdered sugar
  • ½ cup flour
  • 4 tablespoons butter, melted
  • ½ teaspoon cinnamon
Instructions
  1. Preheat the oven to 350 and spray a loaf pan with cooking spray.
  2. In one bowl mix together the dry ingredients - flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the egg, shredded zucchini and oil.
  4. Pour the wet ingredients into the dry and mix until incorporated.
  5. To make the crumb topping, mix the powdered sugar, flour, butter and cinnamon together. Crumble it using your hands once it comes together.
  6. Pour the batter into the prepared pan and sprinkle the crumb topping on top.
  7. Bake for 1 hour - 1 hour and 30 minutes. (Or until a toothpick comes out clean)
  8. Let cool completely.

Hey yall!  I have Elizabeth from Not everything I make is pretty back today to share another delicious breakfast recipe.  Tomorrow is Ryley’s 5th birthday so I’m busy running around getting last minute presents and cake supplies.  And I’ll also be in the corner crying because MY BABY IS TURNING 5!  Holy cow!  I’m not even sure how that happened.  But while I’m busy with party prep, here are some super easy buttermilk crumpets to make everything better. 

Easy buttermilk crumpets  

I spent a few months with my Aunt and Uncle the Summer after my Junior year of high school. My Uncle moved to Australia after college (a while ago), met a lovely woman from Tasmania, they have two kids and now three grandchildren. It may have been my summer but in Australia it was winter.  School was in session and it was chilly compared to my typical California June to August.

I spent a few weeks in a local school and when I would come home in the afternoon my Aunt would put on a pot of tea.  She would have toasted crumpets topped with a little butter & honey and we would eat them together while watching an Australian Soap Opera. On weekends we would explore Adelaide but I enjoyed those simple afternoons warming ourselves with tea & crumpets. I can’t believe it’s taken me so long make them myself. The shape wasn’t uniform but none of my taste testers even took a moment to notice before the crumpets disappeared into their bellies.

Buttermilk Crumpets

Ingredients
  • 2 Cups Flour
  • 2-1/2 tsp Yeast*
  • ½ to 1 tsp Sugar**
  • 1-1/2 Cups Buttermilk, Lukewarm
  • 2 Tbsp Butter, Melted
  • 1 tsp Salt
  • 1 Tbsp Honey
  • *This is the equivalent of just under 1 Tbsp or a prepackaged packet of yeast.
  • ** You can base this on how well things rise in your house, a little more sugar will help kick start the yeast.
Instructions
  1. Whisk Flour, Yeast & Sugar together.
  2. Combine Buttermilk, Butter, Salt & Honey.
  3. Fold the wet ingredients into the dry until just combined. (Don’t over-mix! It will make your batter flat and dense.)
  4. Allow the batter to rise for at least an hour.
  5. Scoop roughly ¼ Cup of batter into lightly oiled silicon cupcake tins or ring molds placed on an oiled baking pan or silicon baking sheet. (So many options, basically you want to choose something that will help the crumpets hold their shape, one recipe ever recommended using mason jar lids.)
  6. Bake at 300 degrees for 25-30 minutes, until batter is cooked thru and firm. The tops will be lightly browned.
  7. Cut in half, top with Butter and Honey, or Jam, or Syrup, or Nutella, or Chocolate Sauce, or…. anything at all that sounds delicious.
